Superfood Snack: Cinnamon & Maca Energy Bites {Paleo, Vega, Nut-Free}

Round 2 of the energy bite series coming at ya LIVE. This time we have cinnamon maca bites -- so so good. Like the cacao & coconut bites, these little guys are full of all the good stuff. 

Cinnamon and maca may be two of my favorites. I can't get enough of cinnamon, and I don't think I ever will. That's why I was stoked to see that I wasn't intolerant to it on my MRT test, though it was high on the green reactives... we'll have to watch that one. Anyway, I incorporate cinnamon into most sweet things I make. First of all, it slows down the absorption of sugar into the blood. This is super important because a lot of the sweeter foods we eat have a little to a lot of sugar in them. If we can slow the absorption of these sugars, with the addition of the amazing taste of cinnamon, why wouldn't we? Cinnamon is also inflammatory because it is full of  cinnamaldehyde which has powerful anti-inflammatory effects.

What's an energy bite without maca? Maca is also a favorite because of its hormone-balancing properties and its energy-boosting effects. I add it to literally everything -- bulletproof "coffee", dairy-free yogurt, chia-seed putting, smoothies, these energy bites you name it. It has a sweet, caramel-like taste that is actually really pleasant! I dig maca and feel its powerful adaptogenic benefits. If you haven't tried it, well, here's your chance! Grab a bag and whip up these energy bites -- then tell me what you think!

Here's what you need:

  • 4 dates (pitted and soaked in warm water for at least 15 minutes)
  • 1/2 cup coconut shreds (unsweetened)
  • 1-2 scoops Further Food collagen* (or Vital Proteins)
  • 2 tsp. Maca powder
  • 2 tbsp. chia seeds
  • 2 tbsp. coconut flour 
  • 1/2 tsp. vanilla
  • 1 tsp cinnamon (or more!)

Here's what you do:

  • Place the pits and the coconut in a food processor. Process until combined and sticky
  • Add the remaining ingredients and continue to process until well incorporated. The mixture should be mixed enough to be able to form balls but not have already formed one large sticky mess! 
  • Roll the mixture into bite-sized balls and enjoy! 
  • These can be kept in the refrigerator but taste best at room temperature!
